Complicated Computer

Well, I have been so busy and haven’t had the brain power to write much and I felt like I got really boring. I also had been missing all your comments for some reason the settings got messed up and I didn’t know it. I just thought I wasn’t getting any comments. Besides that I haven’t been on the internet much at all. I am full of energy now and ready to write. I have come up with subjects for each day of the week. I thought it would give me a writing goal. I may not write much but there will be something every day. Oh and I messed around with my blog and chose some colors. Remember I am legally blind and my husband is color blind. I figure if I get in a funk I can always just change the colors. Today’s writing is going to be named:


Sunday Brunch - Taco Salad

Growing up my mom would make this salad and boy every time I would stuff myself till I could fit no more in.

It is so yummy!

Taco Salad

Ingredients:
1 pound ground beef
1 small onion chopped
1 head of lettuce shredded
1 can dark red kidney beans
1 bag of Doritos
2 cups cheddar cheese
2 Tbsp Taco Seasoning
1 cup Thousand Island dressing

Directions:
Brown Beef and onion.
Take about three handfuls of Doritos out of the bag and crush the rest into little peaces.
Mix taco seasoning and Thousand Island dressing.
In large bowl combine all ingredients (leave out the chips that you did not crush). Mix the salad while also drizzling the dressing.

Eat with a few uncrushed chips on the side.

Yes yummy!

My son loves Thousand Island dressing, it's the ONLY way to get him to eat lettuce - just need to tinker with the ratio a bit as at the moment it's one bite of lettuce in a single layer and one tablespoonful of dressing.

When I make taco salad I mix sour cream and salsa--that makes a good dressing too.

My aunt makes that and you are right...it's delicious...we have it at every birthday party no matter what the menu is....love it!
